Specifically for wedding cake savings, one of the easiest ways to save money, according to a colleague who designs wedding cakes, is to make the "display" cake relatively small, then supplement the servings with less decorated "cutting" cakes in the same flavors and layering design.  Other ways to save include choosing buttercream or other fluffy frostings instead of rolled fondants and other more costly coverings, and by choosing silk or organic fresh flowers rather than hand-made gum-paste or other sugar flowers.
